A Waiter setting up a table
In Madrid, we were eating at restaurant and I saw this waiter, setting up the table, every plate had a 2 color design blue and red, upper half was red and lower half was blue, middle was white.
He set the table, to make sure the red side face the table and blue to the chair, for all the plates, carefully positioned the knife and fork and putting some extra small plates on top of the original one to complete the design.
Question came to my head was, "what makes you want to do this, no one is watching, you can be a bit off with it and no one will care" and I actually thought about it.
You hire someone who's this dedicated to make sure everything is done so the customer can have the best experience in every way shape or form, even if the 2% of people notice the detail in the setup.
Then I thought to myself, that this cant be just him, this is their team culture, everything has to be right, they have to have a proper manager who keeps them accountable, they have a team who are there and are there to make sure they not only "do the work" but give every customer whether a tourist or a local, an experience which makes them competitive.
Another question to ask would be, what if they had one bad fish, who got lazy and didn't do it "correctly" what is their procedure like to make sure that never happens again, how did they come to this level in the first place.
Have a team like that literally makes you unstoppable.
